Friday night cupcakes

 On Friday night Eric was home early and not exhausted so we decided to have a fun date night. Lately we have been watching a lot of baking shows and decided to try and make some really fancy cupcakes. We decided on chocolate cupcakes with a brigadiro (a Brazilian chocolate dessert) with peanut butter frosting.

 It started well. Eric made the brigadiro and it turned out perfectly. Then we mixed up the cupcakes and the batter was light and chocolatey. It also tasted so good. While the cupcakes were baking we started to mix up the frosting. We were a little worried since we were using organic peanut butter. We were right. The frosting turned out more like a peanut butter cup filling rather than frosting. Eric ran to the store to get "normal" peanut butte. While he was gone I took the cupcakes out of the oven. Those did not turn out so well. They were flat and the insides had pulled into itself, away from the sides. They tasted okay but they were in no condition to be filled or frosted. In the end we called it a night and just ate the cupcakes.
